Ahi Crudo

  • 3 lbs highest-quality yellowfin tuna, arctic char or other fresh fish
  • lemon juice
  • olive oil
  • shallots, finely diced (about 1/4 cup)
  • optional : 2 tsp caper, drained well and chopped
  • optional : 1/4 tsp crushed red pepper flakes, chervil sprigs, other herbs for garnish
  • sea salt


Place the tuna in a freezer for 10 minutes; this helps it firm up which makes it easier to slice.

Use a sharp chef’s knife, cut the tuna into roughly 1/8-inch slices. As you work, gently press each each slice onto the cutting surface with your fingers, to flatten it then transfer to a large serving platter or individual small plates, overlapping them slightly and arranging neatly. Pour sauce over and garnish.
